Homemade Curd Cheese Doughnuts
Curd cheese doughnuts are a traditional Lithuanian dessert. Freshly baked they are fluffy and soft inside, they instantly disappear from the table. Maybe because it’s so reminiscent of childhood?
This recipe of these curd cheese doughnuts in my family can safely be called the one that is passed down from generation to generation. My mother learned to cook them from my mom and my grandmother, and I from her.

This dessert is really easy to make. Usually children love them. They can be a perfect breakfast snack, a dessert for dinner, or… an innocent bite before going to bed.
Pay attention to these tips before making Curd Cheese Doughnuts!
- Try not to make the dough too hard, if the dough has fallen to a solid mass, do not add more flour. The softer the dough, the tastier the doughnuts.
- Make small balls from the dough with wet hands. It is also possible to do this using two spoons greased with fat and transferring the dough from one to another. Put it the hot oil.
- I use olive oil to make doughnuts. It does, of course, require a considerable amount of it (about 1/3 bottle), but the doughnuts can also be cooked on lard.
- A spoonful of alcohol can be added to the dough. It makes doughnuts more resistant to fat.
- The cooking time of the donuts depends on the temperature at which the fat is heated. It is important not to rush taking them out of the pot, because if the outside of the doughnuts is nicely browned, they may not be baked inside.
- Doughnuts taken out from the pot should be placed on a strainer or paper napkin. This helps drain excess fat from the donuts.
- These doughnuts are the most delicious yet warm, with milk or cocoa.
How to make Curd Cheese Doughnuts?
First, use a wooden spoon or sieve to sift the curd. It should be a little more solid, less coarse. Add sugar and beat the eggs one at a time. Mix everything well.
Sift the flour through a sieve. This will make doughnuts a bit fluffier. Mix with baking powder and vanilla sugar. Add the dry ingredients to the curd cheese mixed with sugar and eggs.
Make small balls from the dough with wet hands. It is also possible to do this using two spoons greased with fat and transferring the dough from one to another. Put it the hot oil.
The doughnuts should be cooked on both sides in hot grease gently inverting it with a couple of forks. Place the cooked doughnut on a strainer or paper napkin.
Once cooled, transfer to another pan and sprinkle with icing sugar.

You will need
- 500 g curd cheese
- 5 tablespoons granulated sugar
- 5 tablespoons flours
- 1 teaspoon vanilla sugar
- 3 eggs
- 1 teaspoon baking powder
- 4 tablespoons sugar powder
- oil for boiling

Press the curd cheese through a strainer until smooth texture.

Sift the flour and mix with baking powder and vanilla sugar. Stir in curd mass. Knead the dough. The softer the dough, the tastier the donuts.

With your wet (or poured with some flour) hands make a walnut size batter balls. It is also possible to form them with two spoons greased with fat by transferring the dough from one to another and immediately immersing them in the heated oil.

Place several batter balls into the hot oil and boil for about 5 minutes. Turn them occasionally.

Once the doughnuts are done, take them out and place on a paper towel covered plate so that the excess oil could drain.

Sprinkle lots of powdered sugar before serving.
