But don’t be mistaken, this dessert is a little too heavy. The texture is greasy and quite heavy, so eating Curd Cheese Bars in large chunks is a lot of work. But not in big bites. Only this allows you to feel the full play of texture and taste.
Complexity: it is a bit hard to mix shortbread cookies with room temperature butter. But this is it 🙂
Would I make this dessert again? I would. But I think it would be a bit colder day. The texture of this dessert is quiet hard and it makes a bit difficult to keep it in warm places.
Whom I would recommend? For those who love curd cheese bars with chocolate (they are my favourite!) and also for those who don’t really like oven baked pies or desserts in general.
How to make Curd Cheese Bars with Dried Fruits?
First of all, crumble or break the shortbread cookies into pieces of about 1 square centimetre (you can use a rolling pin). Set aside. Then stiff room temperature butter with curd cheese. Add crumbled shortbread cookies and sweetened condensed milk. Mix it very well (no dry crumbles should be left).
Put all dried fruits into a bowl and pour with some boiling water. Let it stay for couple of minutes until they become a bit softer. Add dried fruits into the mass.
Add the mass into a container of the desired shape lined with plastic bag or place in a bag to form the desired shape. Compress well to avoid air gaps and let it sit for at least a few hours (preferably overnight in a cold place). Serve completely cool. Enjoy!

- 320 g shortbread cookies
- 200 g sweetened condensed milk
- 400 g curd cheese 15 per cent fat
- 200 g butter
- handful dried apricots
- handful dried cranberries
