Crispy Lithuanian Waffles with Cinnamon

I remember that I was very little when my father brought us this old, heavy Soviet-style waffles maker from my grandmother. She used to bake them when he and his sisters was even younger. I fell in love with this waffles maker at once! How sweet and delicious the waffles were!
Couple of years ago I found this waffles-maker in you summer house – we have almost forgotten that we have it. I baked some waffles, repeated again, I loved the smell of it, but I didn’t like the texture. They were sweet, but soft and more like a pancakes, but not a crispy waffles.
It took me couple of times to have the best result I would want from these waffles and today I am very happy about the recipe I managed to have.
Why you have to try this recipe?
These Lithuanian waffles are quiet sweet and harder than those that we are used to – Belgian waffles. They are often used as a base for other desserts. For example, if you coat several waffle layers with condensed milk or caramel, you can get a waffle cake, sometimes eaten in Lithuania and other neighbor countries.
You can also roll warm, thin waffles and fill them with boiled sweetened condensed milk – you’ll get totally delicious. Don’t forget about ice cream. You’ve eaten ice cream cones thousands of times, but have you ever tried ice cream in a waffle cup?
No matter what kind of waffles you would like to try or used to enjoy, you should try the recipe, because you are guaranteed to like it. You only need a few simple ingredients: butter, flour, sugar, eggs and… cinnamon.
How to use old waffles-maker?
This Soviet-style gadget for making waffles have been in use for more than 40 years and it is still working perfectly.
Heat the waffle iron. It is heated for approximately 10 minutes and makes a specific sound – as clock ticking. As you hear it, you know that it is ready to be used.
As soon as it becomes hot, grease it on the inside with vegetable oil or some butter. This only needs to be done once.
Put a tablespoon of dough in the middle of the iron and close for one minute or one minute and a half. Roll them right after taking out of the iron while they are still hot.

Crispy Lithuanian Waffles with Cinnamon

You will need
- 4 eggs
- 1 glass granulated sugar
- 4 tablespoons flour
- 1 tablespoon corn flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla sugar
- 1 tablespoon fresh orange juice
- 0,5 teaspoon cinnamon
- grease for baking
- sugar powder for covering
Instructions

Mix melted butter with sugar and vanilla sugar. Separate egg yolks and beat them into the mixture. Mix until smooth.

Mix flour with baking powder and pour into butter and eggs mixture. Pour corn flour, cinnamon and fresh orange juice. Mix it until smooth.

Whip the egg whites until firmly foamed and stiff. Carefully add to the dough and mix with a wooden spoon. Let the dough stand a little.

Heat a waffle pan, add a tablespoon of the dough, and bake it until browned. If you want the waffles to be extremely crispy, bake a little longer.

After removing it from the pan, we roll the waffle around and wait for the next waffle to bake. Once cooled, the waffle crumbles immediately and cannot be rolled.
